Collection: Pasta Salad

Serving size: 4

Ingredients: 

  • 1 Tbps Delish Spice Pasta Mix
  • 5 Tbps Olive Oil
  • 1 1/2 Tsp Salt
  • 1 lemon
  • 4 springs of parsley
  • 8 oz of cherry tomatoes
  • 1 avocado
  • 1 bell pepper
  • 1/2 an white or red onion
  • 1 whole rotisserie chicken
  • 8 oz of pasta

Instructions:

  1. Cook the pasta per the instruction on the box
  2. Slice the onions, bell pepper, and avocado and put aside in large bowl
  3. Slice the cherry tomatoes in half and add to the bowl
  4. Finely chop the parsley and add to it to the bowl
  5. Shred the chicken off the bones and add to the bowl
  6. In a small bowl, add the salt, Delish Spice Pasta Mix, juice of the lemon, and oil and whisk to make a dressing
  7. Add the cooked pasta and the dressing to the large bowl and mix well.  Taste and add salt if needed.

Tips: You can substitute the chicken with well drained canned tuna or with chickpeas for a vegetarian salad.
